So lately I have been in a cooking rut. I have asked some friends to provide some of their favorite recipes for me to try out. Let me tell you...they have been a HIT!! Gary has said that they are some of the BEST dinners that he has had! I am not sure what that says about my previous meals, but I will take it. A huge thank you to Katie H. for her meal masterpieces :)
Campbell's Kitchen Chicken Enchiladas
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
1 cup sour cream
(*I went with the light sour cream)
1 cup Pace® Picante Sauce
2 teaspoons chili powder
2 cups chopped cooked chicken
1 cup shredded Monterey Jack cheese (about 2 ounces)
(*I used the 2%)
6 flour tortillas (6-inch), warmed
1small tomato, chopped (about 1/2 cup)
1 green onion, sliced (about 2 tablespoons)
Heat the oven to 350°F. Stir the soup, sour cream, picante sauce and chili powder in a medium bowl.
Stir 1 cup soup mixture, chicken and cheese in a large bowl.
Divide the chicken mixture among the tortillas. Roll up the tortillas and place seam-side up in a 2-quart shallow baking dish. Pour the remaining soup mixture over the filled tortillas. Cover the baking dish.
Bake for 40 minutes or until the enchiladas are hot and bubbling. Top with the tomato and onion.
Baked Ziti
· 1 pound dry ziti pasta
· 1 onion, chopped
· 1 pound lean ground beef
(*I used ground turkey breast)
· 2 (26 ounce) jars spaghetti sauce
· 6 ounces provolone cheese, sliced
· 1 1/2 cups sour cream
(*I used light sour cream)
· 6 ounces mozzarella cheese, shredded
(*I used 2%)
- 2 tablespoons grated Parmesan cheese
Directions
1. Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.
2. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.
3. Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.
4. Bake for 30 minutes in the preheated oven, or until cheeses are melted.
